[ingredients]

Sweet Potato Chips

  • 2 large sweet potatoes
  • Extra virgin olive oil
  • Sea salt

Filling

  • 1/2 red onion, finely diced
  • 2 cloves garlic, crushed
  • 250g canned black beans, drained
  • 250g canned red kidney beans, drained
  • 1 red capsicum, finely diced
  • 2 tsp paprika
  • 2 tsp cumin
  • Extra virgin olive oil
  • Sea salt

Salsa

  • 2 cups chopped cherry tomatoes
  • 3 tbsp Nexba Mango Kombucha
  • 1/4 small red onion, finely diced
  • 1 red chilli, finely chopped (deseed for mild)
  • 1/4 cup coriander leaves, finely chopped
  • Sea salt

Dairy Free “Sour Cream”

Sweet Potato Crisps

  1. Pre-heat oven to 180°C.
  2. Using a knife or mandolin slice sweet potato into thin rounds to resemble crisps. Toss generously in olive oil and season with sea salt.
  3. Spread sweet potatoes onto a lined baking tray. Spread evenly and cook for 15-20 minutes (turning half way) or until golden and crisp on the edges.

Salsa

  1. Prepare salsa. In a mixing bowl combine salsa ingredients and toss. Set aside for 10-15 minutes for flavours to infuse.

Filling

  1. In a saucepan, heat olive oil, add red onion, garlic and capsicum. Sauté for 1- 2 minutes or until starts to soften. Add beans, paprika and cumin and sauté until vegetables have softened and filling is fragrant. Set aside.

Dairy Free Sour Cream

  1. Prepare sour cream. In a mixing bowl coming ingredients.
  2. Prepare guacamole.
  3. Plate sweet potato nachos with layers of sweet potato crisps, topped with bean filling, salsa, guacamole and sour cream. Garnish with fresh coriander.

Recipe Tips:
For a smoother salsa pulse salsa ingredients in a food processor until desired consistency.

You can also make extra crispy sweet potato crisps in an air-fryer.
