Ingredients
Sweet Potato Chips
- 2 large sweet potatoes
- Extra virgin olive oil
- Sea salt
Filling
- 1/2 red onion, finely diced
- 2 cloves garlic, crushed
- 250g canned black beans, drained
- 250g canned red kidney beans, drained
- 1 red capsicum, finely diced
- 2 tsp paprika
- 2 tsp cumin
- Extra virgin olive oil
- Sea salt
Salsa
- 2 cups chopped cherry tomatoes
- 3 tbsp Nexba Mango Kombucha
- 1/4 small red onion, finely diced
- 1 red chilli, finely chopped (deseed for mild)
- 1/4 cup coriander leaves, finely chopped
- Sea salt
Dairy Free “Sour Cream”
- 3/4 cup thick coconut yoghurt
- 1 tbsp Nexba Mango Kombucha
- 1 tbsp lemon juice
To serve
- Probiotic Guacamole
- Fresh coriander
Method
Sweet Potato Crisps
- Pre-heat oven to 180°C.
- Using a knife or mandolin slice sweet potato into thin rounds to resemble crisps. Toss generously in olive oil and season with sea salt.
- Spread sweet potatoes onto a lined baking tray. Spread evenly and cook for 15-20 minutes (turning half way) or until golden and crisp on the edges.
Salsa
- Prepare salsa. In a mixing bowl combine salsa ingredients and toss. Set aside for 10-15 minutes for flavours to infuse.
Filling
- In a saucepan, heat olive oil, add red onion, garlic and capsicum. Sauté for 1- 2 minutes or until starts to soften. Add beans, paprika and cumin and sauté until vegetables have softened and filling is fragrant. Set aside.
Dairy Free Sour Cream
- Prepare sour cream. In a mixing bowl coming ingredients.
- Prepare guacamole.
- Plate sweet potato nachos with layers of sweet potato crisps, topped with bean filling, salsa, guacamole and sour cream. Garnish with fresh coriander.
Recipe Tips:
For a smoother salsa pulse salsa ingredients in a food processor until desired consistency.
You can also make extra crispy sweet potato crisps in an air-fryer.
