This good mood food recipe is the perfect mid morning or afternoon pick-me-up for when stress snacking kicks in, brought to you by Casey-Lee Lyons from Live, Love, Nourish.
[ingredients]
  • 2 tbsp chia seeds
  • 1/2 cup Nexba Mixed Berry Kombucha
  • 1 cup desiccated coconut
  • 1/2 cup raw cashews
  • 1/2 cup raw macadamia nuts
  • 1/3 cup cacao powder
  • 1/4 cup almond meal
  • 1/4 cup rice malt syrup
  • 1 tbsp coconut oil

  • 1 tbsp coconut flour

  • 1 tsp vanilla bean extract

  • Pinch sea salt 


To decorate (optional):

  • Desiccated coconut 

  • Freeze dried raspberries

  • Chia seeds

  • Sesame seeds 

  • Cocoa powder 

  • Crushed nuts
  • Buckinis

  1. Soak chia seeds in Nexba Mixed Berry Kombucha for 15-20 minutes or until liquid is absorbed and seeds become gel-like.
  2. Add all ingredients to a high speed food processor. Pulse to combine until mixture sticks together. If mixture is too wet to roll, add additional almond meal.
  3. Roll 1-2 tbsp portions of mixture into balls and coat.
  4. Refrigerate for 30 minutes or until firm.
  5. Store in air-tight container in refrigerator or freeze.
